    Dark Chocolate-Dipped Flourless Peanut Butter Cookies 

    Gluten Free, Keto Friendly 

    Our weekend plans: sleep, snow, and COOKIES. All you need is a big bowl, a couple pantry ingredients, an oven, and perhaps some self-restraint. Because if you bake these (and you totally should), there’s a 10/10 chance they’ll disappear within a day. (Don’t worry, we won’t judge).

    Ingredients:

    Directions:

    1. In a large bowl, mix peanut butter, Swerve (or sugar), and egg until a smooth, sticky dough forms. 
    2. Using hands, roll dough into 1-inch thick diameter balls, and place on a baking sheet. Create criss-cross pattern in the tops of cookies, if desired.
    3. Bake at 350 F for 10 minutes, or until edges start to brown. Cool.
    4. Once cookies are cool, melt chocolate wafers and 1 teaspoon coconut oil in a microwave safe bowl, approximately 1.5 minutes.
    5. Dip half of the cookies into chocolate, and sprinkle with chopped peanuts.
    6. Place cookies on wax paper or parchment paper to cool.
